10 Minutes to YUM.by caroline
One of my mom’s favorite dishes is a clean and simple, sautéed fish with spinach, garlic and mushrooms. Now, I’m going to go ahead and put this out there: My mom is not much of a cook. (Love ya, mom!) Not because she can’t cook, but rather because she would prefer to not be the one cooking.
But yesterday, she whipped out her closeted cooking skills and made this dish for me, and I now understand why she loves it so much. It’s deliciously healthy and takes all of 10 minutes to make.
Wanna make it too? Thought so. Here’s how to do it:
- 2 Tablespoons olive oil
- 1/4 cup sliced white or yellow onion
- 1 garlic clove, minced
- 3 – 4 ounces fish of your choice (She chose salmon this time around.)
- 2 large handfuls of fresh spinach
- 1/2 cup sliced mushrooms (Or another addition of your choice — sometimes, she throws in edamame.)
Add olive oil to a medium skillet and place over medium heat. Add onion and minced garlic, and sauté for 1-2 minutes. Place fish fillet in the pan and cook for 2-3 minutes. Flip the fish over with a spatula, then add spinach and mushrooms to pan, stirring the vegetables throughout cook time. Continue to heat the fish until cooked thoroughly, about 5-6 minutes. Serve!
