This is a monthly feature that highlights a gluten-free recipe created by a super-cool college student. This month, we’re lucky to have Ricky and Brad of Point Park University whipping up this Buffalo Chicken Dip, plus a bonus recipe for Flourless Peanut Butter Cookies.
I’m so excited about this month’s college student recipe feature! Not only am I featuring a recipe from one stellar college student, but working with these two roommates means TWO recipes!
When I met Ricky and Brad they had just begun their first year at Point Park University in Pittsburgh (my alma mater). Ricky, who has celiac disease, struggled with finding safe cafeteria food that year and found himself sick as a result of cross contamination on more than one occasion.
This school year, these two are roommates and Brad has proven to be an amazing right-hand man, learning safe kitchen practices to avoid cross contamination and even trying new recipes to help his roommate along his journey.
Let’s take a moment: How much do we love these two?
Here, Brad shares his fun Buffalo Chicken Dip and Ricky whips up Flourless Peanut Butter Cookies, two recipes that are perfect for this weekend’s Super Bowl festivities –– or any occasion for that matter. Enjoy!
Ricky says: “These cookies are great because they only have three ingredients, so there’s no need to go out and buy expensive gluten free flours. Plus, there’s like…some good protein. That’s sorta manly right?”
