Day Eighteen: Gluten-Free with RR Challenge — Applesauce of My Eye

Most of the time green juice, fruit and healthy things of the sort are great for breakfast. And sometimes, you just need cake.

Yesterday was one of those mornings, so I decided to take my craving and use it for Day 18 of the Gluten-Free with Rachael Ray Challenge. The result? Applesauce Cake!

Dan was IN. LOVE. with this cake … and I kinda was, too. ;) I halved the recipe and used an 8×8 pan because the two of us can only eat so much cake, but I am including instructions for the full-sized cake below.

I also decided to add a topping brown sugar crumble topping to give it a more traditional coffee cake look. I used the ingredients from this recipe and put it on the cake before baking. I will include instructions below in case you want to add it too — it’s your call!

  • 2 cups all-purpose unbleached flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon

  • 1 teaspoon nutmeg
  • 1 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cloves
  • 1 cup chopped walnuts (large chunks)
  • 1/2 cup chopped pecans mixed with a 1/2 cup chopped walnuts (large chunks)
  • 1 stick salted butter, softened

  • 1 cup sugar
  • 1 cup sugar
  • 1 large egg, at room temperature

  • 2 teaspoons vanilla

  • 2 cups unsweetened applesauce

Directions:

Pre-heat the oven to 350°F and place the oven rack in the center of the oven.

In a medium bowl, sift together the gluten-free flour, baking soda, baking powder, cinnamon, nutmeg and cloves. Set aside.

Dump the walnuts onto a cutting board and mince into very tiny pieces; you can also use a food processor or chopper. Set aside.

In a large bowl using an electric mixer on medium speed, cream the butter until smooth. Add the sugar and mix on medium speed until fluffy. On low speed, mix in the egg and vanilla, until just combined. Add in the walnuts and mix at low speed until combined. Next, add the applesauce and the flour mixture a third of each at a time, beginning with the applesauce and alternating to end with the dry ingredients. Mix each addition at low speed until just combined. Do not over mix, or the batter will become tough.

If you are not using nonstick bakeware, grease your bakeware with butter and flour it.

For cake, pour the batter into a 9-inch x 13-inch baking pan and bake for 35-40 minutes (TIP: If you want to halve the recipe as I did, use a 8-inch x 8-inch pan and bake for 50-55 minutes), until the top springs when lightly touched and a knife inserted in the center comes out clean. For muffins, pour the batter into a 12-cup muffin pan and bake for 25-30 minutes.

NOTE: If you want to make the crumble topping, then mix together these ingredients and top the cake before baking:

Crumble Topping:

To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown.

(TIP: If you are halving the recipe as I did, then be sure to halve the topping ingredients as well.)

This cake is wonderfully light, and pairs well with tea or coffee for a relaxing weekend morning. I am so glad I added the crumble topping — it gave it a deliciously crispy touch!
