Have I mentioned it’s rainy here? Yeah, well, it is. And when it’s rainy and kinda chilly, something about my typical bowl of salad for lunch just doesn’t sound appealing to me. At all.
So, when lunch rolled around today, I decided to have this guy instead. What is it you ask? It’s called heaven. And don’t get all, “But it looks so weird! What the heck is on it?!” with me. ‘Cause I’m about to tell you.
What you’re witnessing here, people, is a little Shannon family tradition that started way back when I was a wee one: Tuna salad on bread (or English muffin, bagel … whatever) and topped with a slice of pineapple and melted cheese.
OK, so it is weird. But I don’t care because it’s delicious. And I promise you will think it is, too. Something about the sweet mixed with savory is spot-on and all it takes is one bite to fall in love. Here’s what you need:
- Tuna salad mixed to your liking (ours was plain and simple this time — mayo and chopped onions)
- 1 can of pineapple slices in 100% pineapple juice
- Cheese (I usually use Swiss, but this time I did one with cheddar, too.)
- Gluten-free bread, English muffin or bagel (or bread of your choice if you don’t suffer from an intolerance or allergy)
Preheat the oven to 350 degrees. Place your bread on a baking tray and then in the oven to toast. When toasted to your liking, remove the tray from oven and top each slice of bread with tuna salad, one slice of pineapple and cheese of your choice. (Tray will still be hot: Be careful not to burn yourself while doing this!) Turn oven on broil and (using an oven mitt) place tray back in oven to melt cheese (about 1 – 1-1/2 minutes). Watch closely or cheese will burn.
Eat ’em open-faced and have fun making a mess!
We usually opt for these on nights when we want dinner to require little to zero thought, or just want a dish that screams “COMFORT FOOD!” But it also made a great lunch today and was rather filling! I enjoyed it with a “cocktail”:
