Michelle Van Otten’s Secret Weapon Kale Salad for High Energy & Fat Burning:

Ingredients

  • 2  Bunches of Red or Green Curly Leaf Kale (leaves only, remove stems – tear into small pieces)
  • ½ Small Head of Cauliflower (chopped – Cuisinart is best for chopping fast)
  • ½ Small Head Purple Cabbage (shredded – Cuisinart is best for chopping fast – or use ½ bag of pre-shredded)
  • ½ Cup Shredded Carrot (shredded – Cuisinart is best for chopping fast or use ½ bag of pre-shredded)

Directions

Assemble all chopped cut ingredients in a large bowl, mix thoroughly and use a few handfuls at a time for a serving size. Toss a serving size into a serving bowl and massage with a  splash of Tangy Dressing when ready to eat. Store extra dry kale salad ingredients in the fridge and use as needed. Make extra so you spend less time prepping and have more time to enjoy!

 

Tangy Dressing:

  • 1/3 Cup Extra Virgin Olive Oil or Unrefined Avocado Oil
  • 3 Tablespoons Apple Cider Vinegar
  • 2 packets NOW Brand Stevia Powder
  • ¾ teaspoons Mucchi Curry Powder
  • ½ tsp of Sea Salt

Makes a few servings! Store in a bottle at room temp.

 

Pre-Cooked Protein Topping Options to Add Onto Kale Salad:

  • 3oz Wild Grilled Salmon or Other Wild Fish
  • 4oz Ground Turkey
  • 4oz Ground Buffalo
  • 3 Hard Boiled Egg Whites
