My 30-Day Affair with Rachael Rayby caroline
One of the things about having a food allergy or meeting the requirements of a special diet is that very often we look at a recipe and think, "Hmmm … that sounds great. But if only it didn't have (insert unwanted food item here)."
Therefore, we learn how to swap, change and amend ingredients, so that a recipe can better suit our needs, and we realize that food can still be fun and delicious despite our respective dietary requirements.
Now, let me tell you another story: I love Rachael Ray. I think she is smart and cute and funny and lovable and squeezable. I could easily be her best-y (call me, Rach!) and trade girl talk over a plate of her most recent dish du jour. However, there may be just one little setback in our relationship when it comes to food: I am a non-gluten gal, and many of her recipes include that very same ingredient. Cue the dramatic music.
So, what do these two stories have to do with one another? Well, they offer a solution m'dears!
Yep, that's right! I introduce to you the G-Spot's very own Gluten-Free with Rachael Ray challenge! For the next 30 days, I have pledged to make at least one Rachael Ray-inspired recipe per day where I will make the appropriate changes to make the recipe gluten-free.
Why? Because I think RR is the cat's pajamas and I love that she makes dishes that are doable for the average, everyday person.
Oh, and don't you other folks go and feel left out just yet! If you are soy-free, nut-free, vegetarian, vegan and beyond, then I'm going to work on getting these recipes to suit your needs as well. Keep an eye out for alterations and amendments that will make your world rock 'n' roll.
So, how about it? This should be fun, right? I've already chosen tonight's dinner and it looks like Zucchini Fritters with Tuna are on the menu! This recipe will be gluten-free (duh) and dairy-free, and I will post all of the deets in the morning. As Rachael would say — Yum-o!
