We’re all about creating new dishes and making things from scratch in this household, but sometimes you just need to lean back on something quick and simple. Ya feel me?
Last night Dan and I decided to do just that with this Tikka Masala Simmer Sauce from Seeds of Change. For those who are unfamiliar, Tikka Masala is a mild curry sauce that packs the ethnic flavors familiar to Indian cuisine without the oh-my-Gawd-my-mouth-is-going-to-burn-off punch.
It’s delicious. And it’s gluten-free, kosher and fit for lacto-vegetarians.
We simmered some wild flounder in the sauce over medium heat and allowed the fish to cook. It’s a soft enough fish that it broke into pieces, but that’s A-OK.
We served the fish over brown rice with some roasted asparagus on the side and — presto! Dinner was served. The best part? Everything about this sauce screams “Homemade!” I would happily serve this to guests, and feel like I was putting something satisfying and well-made into their bellies.
