Questionable M&Ms and Dinner in a Boxby caroline
Ah, so remember how I said I was looking forward to running outside tomorrow?
Guess who ran outside today?! Me, me, me, me, meeeeee!!
I was sitting here typing away when at about lunch time, I started to see the sun poke through and shine on down. I stepped outside to get the mail and walked upstairs thinking, “Gosh, I really shouldn’t ignore this nice day …”
So, I hurried on in, laced up my running shoes and set out. (This photo isn’t me, but it looks exactly how I felt!)
IT. WAS. GLORIOUS.
I forgot just how great it feels to run outside in shorts and a long-sleeved t-shirt. Wondrous I tell you! I only clocked in about 3.5 miles, but it was just right for a noon-time run. Not too long, not too short as Goldilocks would say … if she were a runner.
That run kept my work day humming along just perfectly, and before I knew it — it was 6 o’clock! In fact, the only reason I popped out of my crazy-computer-staring-and-typing stupor was because I received a cutie-pa-tootie message from my brother, Luke’s, girlfriend, Kelsey:
How cute is that? The funny thing is, I know that’s his hand, too — he has a freckle in nearly the same spot on each of his palms. I love this kid to pieces and Lord knows I want him to be little again and never, ever grow up, but I love that he has learned how to love so well. I hope I taught him some of that.
Tonight is one of those nights where serious cooking seems completely out of the question, so we are going with roasted broccoli and asparagus, and one of my favorite quick dishes, Lundberg Organic Risotto Porcini Mushroom. This is such an easy, gluten-free, in-the-box mix, and it’s delish. I guess it’s really been a risotto kind of week in this household!
Dessert, of course, has not been underestimated (it takes a reallly long day for me to do that). I made a batch of these cupcake brownies earlier today, but instead of topping it with the mint chocolate sauce, I did a bit of a change-a-roo.
If you want to try it, too, then just follow all instructions for the cake, but swap out the Chocolate Sauce ingredients for these:
- 3 Tbsp of peanut butter
- 1/3 cup milk
Directions: Turn stove on low heat, and add peanut butter to a small pot. Place pot on heat and allow peanut butter to melt for about 30 seconds, stirring constantly. Turn heat off and add milk. Stir, stir, stir until the sauce has a syrup-like texture. Add more milk (slowly) if necessary. Top each brownie cupcake with a spoonful of the sauce, smoothing it so it looks pur-dy.
I can’t wait to sink my teeth into these babies tonight. Deliciousness.
