chocolate peanut butter mug cake

This is a monthly feature that will highlight a gluten-free recipe created by a super-cool college student. This month I’m featuring, Kristi, a junior at the University of Pittsburgh at Johnstown.

Kristi says: This recipe was adapted from Girl Cooks World. All you need is your ingredients and a microwave!



3 Tablespoons granulated sugar
1-1/2 Tablespoons rice flour
1 Tablespoon potato starch
2 Tablespoons cocoa powder
1/4 teaspoon baking powder
4 Tablespoons almond milk
1-1/2 Tablespoons vegetable, canola or olive oil
1/2 Tablespoon peanut butter
pinch of salt


Combine all ingredients in the mug and stir to mix. If the mixture seems too thick, then add a little more milk. Cook for 70 seconds in the microwave.
