college student special: flourless peanut butter cookies

This is a monthly feature that will highlight a gluten-free recipe created by a super-cool college student. This month, we’re lucky to have Ricky and Brad of Point Park University whipping up these Flourless Peanut Butter Cookies and Buffalo Chicken Dip. {See their photo story.}



2 large eggs
1 cup smooth peanut butter
1 cup sugar


Preheat oven to 350 degrees F. Beat the eggs in a bowl, and stir the peanut butter and sugar into the eggs. Drop dollops of dough from a spoon onto a cookie sheet.

(2) Bake the cookies for 13-15 minutes, or until the cookies spring back a little when you poke them. Makes about 2 dozen.
