curried sweet potato & black bean burgers

ingredients

Makes 8 burgers

2 medium sweet potatoes
1 14.5-ounce can of black beans, drained and rinsed
1/4 cup raw sunflower seeds
1/3 cup sweet yellow onion, diced
1/3 cup red pepper, diced
1 teaspoon cumin
1 Tablespoon red curry paste, like Thai Kitchen
1/2 cup brown rice flour
1/2 cup flaxseed meal
2-3 Tablespoons olive oil
sea salt and pepper to taste

directions

(1) Preheat oven to 400 degrees F. Using a fork, poke holes into a large sweet potato and place in oven on a sheet of foil. Bake until the potato can be easily pierced with a fork, about 45 minutes. Remove from oven and set aside.
(2) When the sweet potato has cooled, slice into circles and put into a food processor. Add black beans and sunflower seeds; pulse until ingredients are mashed and well combined. Scoop mixture into a large bowl.
Add onion, red pepper, cumin, red curry paste, sea salt and pepper to the mixture. Stir until all ingredients are thoroughly combined.
(3) Place brown rice flour and flaxseed meal onto a plate, and combine the two ingredients.
Begin to shape bean and potato mixture into patties, placing each patty onto the brown rice flour and flaxseed meal mixture and covering both sides.
(4) Heat the olive oil in a large skillet and place each patty into the skillet (you may have to repeat this process depending on the size of the skillet). Cook each side until browned (about 7-8 minutes each side). Remove from heat and serve.
