flourless peanut butter cookies

36 cookies

1 cup granulated sugar
1 cup creamy peanut butter
1 teaspoon vanilla extract
1 teaspoon baking powder
1 egg
Garnish with sugar crystals

(1) Heat oven to 350 degrees. Prepare a baking sheet by lining with parchment paper or baking mat (like this).

(2) Using a standing or electric mixer (you can also mix by hand), cream the peanut butter and sugar. Slowly add the baking powder and vanilla. Add the egg and mix until thoroughly combined.

(3) Use a small spoon or melon ball scoop to form dough balls that are approximately the size of a Tablespoon. Press the top of each cookie with a fork to form a crisscross pattern on top.

(4) Sprinkle the tops of each cookies with sugar and place in oven to bake for 10 minutes. Allow the cookies to sit on the pan for 5-6 minutes until they settle. Remove from the pan with a spatula and place them on a wire rack to cool completely.
