fresh feta & mint brown rice couscous salad

approximately 4 cups

2 cups cooked gluten-free brown rice couscous
1-1/2 cups grape tomatoes, sliced in half lengthwise
1 cup yellow pepper, chopped
1/2 cup zucchini, peeled and chopped
1 cup feta cheese, crumbled
1 Tablespoon fresh mint, minced
2/3 cup gluten free balsamic dressing


(1) Add couscous, tomatoes, peppers, zucchini, feta cheese and mint to bowl, stirring to combine. Drizzle balsamic dressing on top and toss to combine. Store in refrigerator until ready to serve.
