Makes 16-18 brownies; recipe adapted from EatLiveRun.com
1 box of gluten-free, store-bought brownie mix (follow box instructions for 8×8 or 9×9 pan)
for mint layer
1 cup confectioners sugar
2 Tablespoons butter, softened
1 teaspoon peppermint extract
1-1/2 Tablespoons milk
for chocolate topping
1 cup semisweet chocolate chips
(1) Make brownies according to instructions listed on box.
(2) While brownies are cooling, use a standing or hand mixer to combine all ingredients for the mint layer. Once the brownies have completely cooled, spread the mint layer evenly over the top and then place brownies in the refrigerator for 30 minutes in order to allow the mint layer to set.
(3) Next, melt the chocolate chips either in a double boiler, stirring consistently (or in the microwave, stirring during 20 second intervals). Spread the melted chocolate over the top of the mint layer evenly and place brownies back in the refrigerator for two hours until set.
(4) After chocolate has cooled completely, slice and serve!
