grapefruit, asparagus & hearts of palm pizzaby sincerelycaroline
1 8-inch gluten-free pizza crust
1/2 cup grapefruit, peeled and cut into 1-inch sections
1/3 cup fresh asparagus, chopped
1/3 cup hearts of palm, sliced into thin circles
2 Tablespoons goat cheese, crumbled
1/4 cup shaved Parmesan
3 Tablespoons extra virgin olive oil
2 teaspoons balsamic vinegar
1 teaspoon dijon mustard
1 teaspoon garlic or shallot, minced
1 teaspoon thyme, finely chopped (optional)
(1) Preheat oven according to pizza crust instructions. Prepare pizza crust accordingly, then top with grapefruit, asparagus, hearts of palm, goat cheese and Parmesan. Bake pizza according to package instructions.
(2) While pizza is baking, mix together all ingredients for dressing, stirring with a fork until thoroughly combined.
(3) Remove pizza from oven and drizzle with prepared balsamic dressing. Slice and serve.
