pumpkin spice granola

1/4 cup maple syrup
1/2 cup all-natural pumpkin puree
3 cups gluten-free oats
1/4 cup pecans, chopped
1/2 cup raw pumpkin seeds
1/4 cup chia seed (or flaxseed meal)
1/4 teaspoon sea salt
1/2 teaspoon gluten-free vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg


(1) Preheat oven to 300 degrees. Prepare a baking sheet by lining with parchment paper or baking mat (like this).

(2) Place the pumpkin puree and maple syrup in a small pot and warm over medium heat, stirring consistently. Remove from heat and set aside.

(3) In a medium bowl, combine the oats, pecans, pumpkin seeds, chia seed, vanilla extract, cinnamon, nutmeg and salt. Pour the pumpkin puree and maple syrup mixture on top of dry ingredients, and stir until ingredients are well-combined.

(4) Spread the mixture onto the baking sheet and then bake in oven for 55-60 minutes, until golden brown. Stir/toss the granola with a spatula halfway through the bake time.
