1 container pre-made gluten-free pie & pasty dough (like Pillsbury Gluten-Free brand)
6 whole large eggs
3 large egg whites
2 cups chopped spinach
1-1/4 cups chopped mushrooms
2-3 garlic cloves, minced
1/2 cup skim milk
1/2 cup sliced Swiss cheese, sliced
1/4 cup shredded cheddar cheese
1/4 teaspoon sea salt
(1) Preheat oven to 400 degrees. Press pastry dough into a 9-inch round pie pan and set aside.
(2) In a medium bowl, whisk together eggs, egg whites and milk. Stir in spinach, mushrooms, garlic, Swiss cheese, cheddar cheese and sea salt. Pour into pie shell loosely lay a sheet of foil on top of the quiche before placing in oven.
(3) Bake for 25 minutes covered, then for an additional 5-10 minutes uncovered, until crust is golden brown. Remove quiche from oven and allow it to cool for 7-8 minutes before slicing and serving.
