vanilla almond granola

ingredients

makes 4 – 4 ½ cups

3 cups rolled, gluten-free oats**
1/2 cup chopped raw, slivered or sliced almonds
1/2 cup pure maple syrup
1/4 cup honey or agave
2 teaspoons of pure vanilla extract**
1/4 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

directions

(1) Preheat the oven to 300 degrees F. Line a large baking sheet with parchment paper or a baking mat. Set aside.

(2) In a medium bowl combine the oats, almonds, maple syrup, honey or agave, vanilla extract, salt, cinnamon and the nutmeg.

(3) Spread the mixture onto the baking sheet and bake until golden brown, stirring occasionally, about 50 – 60 minutes. Allow granola to cool completely before storing in an airtight container.

** As always, make sure all ingredients are 100% gluten-free before using. However, it is important to pay extra attention to two of the items on this list: the oats and vanilla extract. I used Bob’s Red Mill Gluten-Free Old Fashioned Rolled Oats and McCormick’s Pure Vanilla Extract.
