taco tuesday: review of the taco revolution

Hiya, cupcakes! Today, I am so excited to share with you TWO recipes from the new book “The Taco Revolution” by Brandon Schultz. I don’t know about you, but in this household we love to have taco night and play around with new ingredients to spice up old favorites. So, when Brandon offered me an opportunity to sneak a peek at his book, my stomach I was more than happy to oblige!

The book includes more than 100 delicious, inventive recipes, like:

– California Tofu Tacos

– BLT Tacos

– Chipotle Chicken Taco

– Margherita Pizza Taco

– Caprese Tacos

– Three-Bean Tacos

– Bacon, Egg and Cheese Tacos

– Strawberry Vanilla Breakfast Tacos

HUNGRY YET?! Brandon also shows you how to make other fun recipes, like Sweet Corn Ice Cream, Corn Tortilla Crisps, Mango Salsa and DIY Tortilla Bowls. Seriously, taco night is about to get a whole helluva lot more fun!

One more bonus: These recipes can easily be made gluten-free by choosing gluten-free tortillas or even fresh lettuce leaves to build a yummy taco. We had both options on hand when we whipped up a bunch of the recipes on our family vacation last month. Of course, we gobbled all of them up, but a quick vote proved the Potato Taco and Cheeseburger Taco were the favorites amongst the group.

Choosing to make the Potato Taco was a completely selfish choice because I LOVE MY POTATOES. Seriously, I tell people I eat potatoes in some form every day and I’m not sure if they believe me, but it is 100% true. Potatoes are a true passion of mine.:) Plus, I had never had potatoes in a taco, so I was curious to see what they tasted like as an addition. I wrapped mine up in lettuce … and then had three more. (Tee, hee!)




My brothers, Isaac and Luke, chose The Cheeseburger Taco and said it was hands down their favorite. Cheesy and simple to make, they stuffed the ingredients into gluten-free corn tortillas and went to town!
