Last night’s Goat Cheese Asparagus Risotto was A-mazing.
But I woke up this morning feeling not-so-hot (not because of the risotto, but because I don’t feel well). I don’t know what’s up, but my body just feels a little off track. Hmmm … looks like it’s a Green Juice kind of morning. Hopefully, it will flush the systems and get me feeling better in no time!
Today is Dan’s first day of physical therapy, so guess who is his designated driver? We’re off to go do that soon, but later I will be posting the risotto recipe for your eating pleasure — delish!
For now, I leave you with the sweet kitty shot of the day. Simon is a giant, part Maine Coon cat we adopted three years ago with his sister Madeline. He is the size of a small dog and sometimes I can believe he actually lives with us. Simon is truly the nicest cat I have ever met — he loves to give “kisses” by head-butting your cheek, hand, leg, arm, toenail … he loves LOVE!
