Ugly Sweaters, Yummy Food.

My sister had an ugly sweater holiday party this weekend, giving me the perfect excuse to let me inner nerd shine and show it off like there was no tomorrow.

I think we look pretty cool … don’t you?

In honor of the holiday fun, Dan and I, naturally, whipped up a few treats to contribute to the spread my sister had going on. I made gluten-free brownies with peanut butter cups (OMG) and Dan made his homemade guacamole (another OMG).

I came upon this recipe idea after taking a tip from one of my lovely co-workers, Lauren. We were dishing about various appetizers that are fun to take to parties and she said she often makes her sour cream-, mayo- or cream cheese-based dips with nonfat Greek yogurt to cut the fat.

Having had just a few different kinds of Spinach & Artichoke Dip in my lifetime, I decided to wing this recipe and give Lauren’s idea a shot. Here’s how my recipe turned out …

Low Fat Spinach & Artichoke Dip (gluten-free and vegetarian)

  • 2 Tablespoons olive oil
  • 6 ounces fresh spinach
  • 16 ounce 0% plain Greek yogurt
  • 14-ounce can artichoke hearts, chopped
  • 2 Tablespoons garlic, minced
  • 3 ounces shaved or shredded Parmesan
  • 1 teaspoon sea salt
  • 1/2 Tablespoon red chili pepper flakes


In a medium skillet, warm olive oil over medium/high heat. Add spinach and sauté, stirring constantly until cooked through, about 4-5 minutes. Remove from heat and set aside.

Add all ingredients into a medium bowl, including spinach. Stir until thoroughly combined.

Serve dip warm by heating in microwave in a microwave-safe dish until heated through — about 2-3 minutes. You can also serve it up cold!

It’s my opinion that if you are serving this dip up warm, then it goes best with bread (gluten-free if you need it to be). And if you are going to dish it up cold, then I like it with tortilla chips.

I can honestly say I did not miss the mayo and cream cheese that are often staples in this dip dish. The artichokes, garlic and spinach are so wonderfully flavorful on their own, and the red chili pepper flakes give it a nice lil’ kick.

Thanks to Lauren for this fab low fat idea. Serve it up at an upcoming holiday party completely guilt-free (i.e. more room for cookies)!
