This past weekend I had the absolute pleasure of teaching a cooking class at the Pittsburgh Williams Sonoma store in Shadyside.
These types of events — where I get to chat face-to-face with each of you — are the icing on the (gluten-free) cupcake to what I do every day. I love hearing your feedback about various recipes or my book, and it’s so much fun to hear each one of your stories about your journey toward better health. A few highlights:
How nifty is that overhead mirror, so that people could see what I was doing as I was cooking? I was also lucky enough to have my talented filmmaker of a brother, Luke, attend the event and record some highlights of me preparing food and talking with visitors. More on that to come soon!
OK, so … I know: What did I make?! Class attendees had a chance to try the Orange Carrot Ginger Sunrise Smoothie from my book, a spiralized zucchini “pasta” dish with dairy-free Cashew Cream Sauce and Flourless Chocolate Pistachio Cookies for dessert. Lucky for you, I’m sharing the recipe for the cookies today …
I added the pistachios for an extra somethin’ somethin’, but you can swap ’em for your favorite nut (slivered almonds, chopped walnuts, etc.) or nix them all together. People loved that the cookies are not only a delicious dessert, but so simple to make. Everyone kept saying “I can’t believe these are gluten-free!” They were a hit!
