Howdy, sweet peas! How gorgeous is that ↑ tasty beauty? I’ll tell you this much: She was no match for me and my healthy appetite last night!

As you all know, I just wrapped the first draft of my gluten-free healthy living book (coming out in January 2014). I will be honest: After countless hours spent in the kitchen and last week’s first round of edits, I needed a bit of time from turning on my gluten-free recipe-making brain power. That’s not to say I didn’t LOVE making all of those dishes come to life -– you bet your sweet behind I did. Instead, the truth is I was a little burned out … girl needed a break, you know?

Well, it’s time to get back into the swing of things and we’re kicking it off with this delish pizza …

Grapefruit, Asparagus & Hearts of Palm Goat Cheese Pizza

Ingredients (4 slices)

pizza

  • 1 8-inch gluten-free pizza crust
  • 1/2 cup grapefruit, peeled and cut into 1-inch sections
  • 1/3 cup fresh asparagus, chopped
  • 1/3 cup hearts of palm, sliced into thin circles
  • 2 Tablespoons goat cheese, crumbled
  • 1/4 cup shaved Parmesan

dressing

  • 3 Tablespoons extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon garlic or shallot, minced
  • 1 teaspoon thyme, finely chopped (optional)

Instructions

Preheat oven according to pizza crust instructions. Prepare pizza crust accordingly, then top with grapefruit, asparagus, hearts of palm, goat cheese and Parmesan. Bake pizza according to package instructions.

While pizza is baking, mix together all ingredients for dressing, stirring with a fork until thoroughly combined.

Remove pizza from oven and drizzle with prepared balsamic dressing. Slice and serve.

 Want to make it vegan? ♥ Use a vegan pizza crust and swap the goat and Parmesan cheeses for your vegan cheeses of choice.

I used Schar’s Gluten-Free Pizza Crust for this recipe, but you are welcome to use whatever pizza crust you love best! If you don’t have hearts of palm on hand, then you can also substitute artichoke hearts for a similarly tasty effect.
