Feels Like Spring … ?

I don't know about y'all, but here in the midwest the weather has been straight up fickle. We've gone from 90+, sunny weather on Sunday to wind and rain earlier in the week, and other days have just been plain ol' undecided (we're talking rain, sunshine and hail in one day here, people).

But yesterday was one of those days when everything just seemed right. The wind settled down, the sunshine peeked through the clouds, the flowers were blooming, birds were chirping and one glance outside made it feel like you were living in a damn Disney fairytale.

It was magical.

Dan and I went for a nice evening walk before dinner, and it was so nice to just chill out and take things slow. I am often prone to making any kind of movement fast and to the point, so it was a pleasure to breathe in the fresh air and literally stop and smell the roses. :D


After our walk it was time for dinner, which turned out to be a rather tough decision. I don't know what it is about sunny days that can sometimes make cooking in the kitchen seem like a chore, but all either one of us wanted to do was sit outside and munch on fruit, cheese and whatever else seemed appropriate.

However, our hungry tummies told us otherwise, so we finally settled on stuffed baked potatoes. When we make these guys (they're a favorite in our house) Dan usually handles the prep, leaving me a bit of time to finish up last-minute work stuff and, of course, take pictures!

And lots of yummy ones too …

While the potatoes were baking in the oven, Dan sautéed some chopped mushrooms and broccoli in olive oil. Once the potatoes were good-to-go, he sliced them open and stuffed them with the broc-mush mixture, topping them with cheese before placing them under the broiler for 30 seconds to 1 minute to get the cheese nice and melt-y. We topped them off with a dollop of sour cream and chopped fresh parsley, and then dug in!

If you want to make 'em vegan, use vegan sour cream and cheese, like Follow Your Heart Vegan Gourmet Sour Cream Alternative and Daiya Deliciously Dairy Free Cheddar Style Shreds (both are gluten-free, too).

No doubt, it was a delicious night!
