It's OK to be Choosy When You Have Picky On Your Sideby caroline
Have you ever taken a bite (lick, smidge, chomp) of food and thought, “Well, that’s just too good to be true”?
How about an energy bar? No? I would have said the same thing until about an three hours ago, when this sexy stranger walked (via USPS) into my life …
Holy effing energy bar. These Picky Bars are fan-freaking-tastic. Gosh, I just don’t even know where to begin. I, naturally, had to try all three of them the moment I tore into the package, so Dan and I set up a sampling station and got to work. There are three flavors: Lauren’s Mega Nuts, and two other flavors that have yet to be named (name ’em and you can win!), but one is a Peanut Free, Vegan, Almond Butter bar and the other is a Peanut & Tree Nut Free, Honey Roasted Sunflower Butter. All of the Picky Bars are gluten-free and dairy-free.
And completely delicious. Did I mention that?
I love that these bars have the consistency of real food, you can really bite into one and chew it on up. No airiness or empty noshing. And they have the makings of food that is good for you, not a bunch of ingredients you can’t even pronounce.
I’m hooked. These bars are going to fuel so many long summer runs. Ah, imagine just the two of us, hand-in-hand, taking long runs up hills and all over town. It will be magical. And I have Kristy at KristyRuns to thank for this happy union. Maybe she’ll be my MOH at our wedding? (Tee, hee!)
It’s easy to say that after my rough night, I needed this kind of pick me up. And, boy, did it lift my spirits! Luckily, I am feeling much better. As I was lying in bed last night, wide awake with stomach pains and night sweats, I thought about how easy it is to forget that those kind of experiences used to be a part of my everyday life. I feel so fortunate to no longer (for the most part) feel that way. Waking up this morning was a familiar reminder of what these particular foods can do to my body. I felt weak, headache-y, dehydrated, tired and pretty much like I had the flu. It’s a terrible feeling, and I will be curious to see what I discover in relation to my body and its ability to deal with soy.
Minus the tofu last night, Dan’s Thai Basil Coconut Rice as a side dish was dee-lish. If you want to try it for yourself, then here are the deets:
Thai Basil Coconut Rice (Gluten-free and vegan)
- 1 can of light coconut milk
- 1 1/2 cups water
- 1 1/2 cups of rice (We used Lundberg’s Organic California Brown Jasmine.)
- 3 cloves of garlic chopped
- 1/c cup basil chopped
Directions: Add all ingredients to a medium pot, stir and then bring to a boil. Once boiling, reduce the heat, stir again, and then allow it to simmer for about 4o minutes, or until all liquid has been absorbed.
I just whipped up another batch of my Vanilla Almond Granola that will be a wonderful treat for tomorrow morning, and then I am putting together the details on a very exciting personal challenge that I am kicking off tonight (more on that in the morning)! And then, I am hoping to hit the hay early after last night’s sleepless “adventure”, perhaps, with this guy:
