Yesterday was one of those days where I just couldn’t seem to get warm. I have no idea why because I’m usually a rather toasty person, sweating with one simple hand gesture or excited movement. (Someone once told me my sweaty habits mean I am healthy … here’s hoping.) It was especially strange given the fact that the weather outside was mild and reminiscent of spring days that are lurking just around the corner.

Nevertheless, I was chilled. And so, I decided to add a bit of spring-like color to my dinner by using leftover lemons that I had in the refrigerator. I prepared this beautifully light tofu dish and sipped on hot green tea. It might not be spring yet, but this dinner was exactly what the doctor (groundhog?) ordered!


This dish was yummy and filling! Next time, I think I might even add some veggies, like spinach or fresh peppers, to the sauté pan when I cook the tofu. I think it might add a fresh kick to the recipe!
